So one weekend I decided to do a bit of baking. Looking around the kitchen to see just what we had lying around, I was pleasantly surprised! You really don’t need many ingredients to get your bake on! So here are my super easy Apple Cinnamon Muffins!
What you’ll need:
2 cups plain flour
1 Tbsp baking powder
2 tsp cinnamon
2/3 cup brown sugar, firmly packed
2 apples, I used Pink Lady apples for this, peeled & chopped
3/4 cup raisins
125g melted butter
2 eggs lightly whisked
3/4 cup milk
First of all preheat your oven to 200 degrees Celsius & line a muffin pan with paper muffin cases. Sift the plain flour, baking powder & cinnamon into a large bowl.
Stir in the brown sugar, apples & raisins.
Whisk up your eggs & combine with the milk & melted butter before making a well in the dry ingredients.
Pour the wet ingredients into the dry & stir with a metal spoon until only just combined. Then spoon the muffin batter into the paper cases.
Bake for around 20 minutes or until the muffins have all gone golden brown & a toothpick inserted into the centre comes out clean.
There you have it! Warm, fluffy, delicious apple cinnamon muffins! Yum!
I brought a nice big batch of these into work & gosh they were all gone within the hour! Give these a try sometime, you probably won’t even have to go to the supermarket!
