When I travelled to America a few years ago I knew what to expect food-wise. Large servings, way too many carbs & meat, not enough veggies & probably one too many cocktails. But one thing I didn’t count on was cornbread. This staff is beyond delicious. It’s a super-tasty side dish that goes perfectly with anything saucy. All of those things like ribs, pulled beef, pulled pork, brisket are perfect with a side of cornbread & a side of slaw. Another plus? It’s super easy to make & perfect for a large lunch or dinner.
What you’ll need:
85g butter, melted
1 cup corn meal
3/4 cup plain flour
1 tbsp sugar
1 & 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 eggs lightly beaten
1 & 1/2 cups buttermilk
Preheat the oven to 220° Celsius & lightly grease an 8 inch baking dish. In a bowl mix together the cornmeal, flour, sugar, baking powder, baking soda & salt.
Now it’s time to crack an egg! (Or two as the case may be…)
Mix together the eggs, buttermilk & melted butter. Pour the wet ingredients into the dry ingredients & fold until there are no more dry spots.
The batter will still be lumpy ^^
Pour the batter into the baking dish & bake in the oven until the top is golden brown & a skewer inserted into the middle comes out clean, usually around 20 to 25 minutes. Remove it from the oven & let it cool for 10 minutes before serving.
There you have it. A delicious side dish to any sort of midwest style meat dish. It’s a much tastier alternative to simple bread rolls & a more interesting side than potato salad (although, being part Eastern European, don’t you take away my potato salad!!).
