I absolutely love granola. It’s easy, delicious, simple to prepare & best of all, this one is vegan & gluten free! While I’ve been on the diet to try & figure out what food allergies I might have, I’ve been experimenting, trying to find ways to have my favourite foods without incorporating anything that might cause my symptoms to flare up. This granola is exactly that & boy, does it hit the spot! It’s seriously easy to make too!
What you’ll need:
1 cup hazelnuts, roughly chopped, smashed, in pieces basically
1 cup almonds, in pieces like the hazelnuts
1 cup coconut flakes
2 Tbsp chia seeds
1 Tbsp sunflower seeds
1 Tbsp pepitas
1 Tbsp apple sauce
2 Tbsp rice malt syrup
2 Tbsp raw cacao powder
Plus anything else your heart desires!
Start by preheating your oven to 120 degrees Celsius then crush, chop, blend your hazelnuts & almonds.
Add a good dusting of coconut flakes!
Then all of the nuts & seeds you’re wanting to add in. I love to make my granola chock full of nuts & seeds. It’ll really help you to keep full, especially as it’s vegan & gluten free so you won’t be able to use oats.
Now it’s time to add in your cacao powder. Cacao is an amazing thing. It has so many nutrients & antioxidants in there for you! Finally, mix in your wet ingredients, the apple sauce & the rice malt syrup. Give it all a really good mix at this point, making sure everything is distributed evenly.
Then lay it all out in a baking tray & pop it in the oven. Depending on your oven, check on it in 30 minutes. Mine took a little longer to really crisp up nicely. Let it cool before storing in an airtight container.
Now it’s time to get creative! I love to have mine with Coyo coconut yoghurt (banana & chia is my fave!) & a mix of berries. This is of course just a serving suggestion but between you & me, it’s absolutely delicious!
