Avocado Egg Salad

This is going to change your life! I know it changed mine!

Everybody knows egg salad – I personally love it – but it’s one of those things where the health aspect is a little bit questionable. You’re thinking ‘But it’s just hard boiled eggs?!’ but then you’re next thought is ‘And they’re covered with mayonnaise’. Now I like mayonnaise just as much as the next girl, but unless you’re making it at home it’s not going to be super healthy for you considering it’s filled with preservatives, sugar and salt. Not nice.

So, I thought, why not replace the mayo with something a touch healthier? Now, living in Australia, it’s pretty hard to find a place that doesn’t serve avocado toast for breakfast. In fact, I think it’s safe to say that whilst we may not have invented avocado toast, we’ve certainly perfected it and brought that perfect version to the world!

So, how about this – egg salad with avocado! Genius, right?!

How To Make It

What you’ll need for this delicious recipe (serves at least 4 or more if it’s a side dish):

3 ripe avocados
2 lemons
8 eggs
salt & pepper

Start by boiling your eggs. Pop them into a pot of cold water and turn to your highest heat. Set a timer for 10 minutes as soon as that water starts to boil.

Meanwhile, you can work on your avos.

Halve and juice the two lemons and pop into a blender, along with the roughly chopped avocado, a dash of salt and pepper, and blitz.

You’ll be left with a beautiful pureé, roughly the same colour as my grandmother’s old 1970’s bathroom.

Once the eggs are done, run cold water over them and pop them in the fridge to cool down. Nothing worse than burning your fingers on eggshells right off the stove!

Ever taken half an hour to peel an egg perfectly? We’ve all been there. Here’s the cheat’s way – gently knock the egg on your cutting board in a few different places then roll it with your hand. That will completely loosen the shell and you’ll take it over in less than 10 seconds.

Once you’ve taken the shells off, it’s time to start chopping! Egg-cellent as my good friend would say.

Dice up the eggs and pop them in with your avocado-lemon pureé then mix it all up.

And you’ll be left with this delightful concoction!

And now the choice is yours. You can serve it up on toast or on a sandwich or even as a side dish (like what we did at a recent BBQ). Just quietly, it received rave reviews and, considering how easy it is to make, let’s just say it’s going to become a bit of a staple!
