I love a good chopped salad. One of the most frequent things I have for lunch at work is my own special take on a chopped taco salad. When we were in Hawaii last year we went to Kona Grill & I tried their chopped salad. It was beyond amazing. Of course, trying it in Honolulu made the experience even better! When I got home, I knew I wanted to try it for myself. It’s actually super easy! It’s a simple chopped salad made with a base of iceberg lettuce, tomato, avocado & cheddar cheese pieces topped with macadamia-crusted chicken & a honey dijon dressing. I ended up googling how to do the macadamia-crusted chicken (surprisingly easy!) & the dressing (simple as!) & the salad tasted amazing. Now, whilst it wasn’t as good as eating it, on holidays in Honolulu for the first time, it was still pretty darn good!
