Super Healthy Mexican Plate


Ok, confession time. I absolutely, unequivocally love Mexican food. I feel like it’s my spirit animal of the food world. Or spirit food? I’m not sure.

The flavours are so delicious & the textures & spices always make for the best meals. The only problem? It can get a little too calorie-heavy. So I wanted to make a bit of a Mexican Plate, a deconstructed burrito of sorts that was healthy but still super tasty. So here’s my recipe, try it out for yourself!

What you’ll need:
1/2 chicken breast, grilled
1 roma tomato
1/4 red onion, diced
handful of coriander, roughly chopped
1/2 avocado
jalapeno, sliced or chilli flakes
1 lime, juiced
1/4 cup black beans
1-2 Tbsp salsa


While the chicken is grilling, chop up your tomato & red onion. This will be the base for your simple pico de gallo.


Add coriander & half a squeezed lime then mix it all up.


It should start to smell absolutely delicious at this point!


Now, onto the guac. Mash up the avocado, add the jalapeno or chilli flakes, add the other half of the lime juice & mix up.


 Rip up a chunk of lettuce & add it and the pico de gallo to your plate.


It’s probably around this time that you’ll be wanting to start heating up your black beans. Add the guacamole to the plate.


Add the heated up black beans, grilled chicken & coat that with the salsa & there you have it. A seriously tasty, seriously healthy Mexican Plate that the whole family (& your waistline) will love!
